I love birthdays, and I love cookies, so when I came across a recipe for birthday cake cookies, I was super excited to make them for my friend’s birthday. I modified the recipe to my taste, and they came out delicious! This recipe makes around 40-45 cookies.
- 1/2 cup butter, room temperature
- 1 cup light brown sugar
- 2 eggs
- 2 tsp vanilla
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 cups Pillsbury Funfetti Cake Mix
- 1 1/2 cups flour
- 3/4 cup sprinkles
- 2 cups white chocolate chips
- 2 cups chopped Birthday Cake Golden Oreos (roughly 10-14 cookies)
Step 1: Mix together butter and brown sugar until light and fluffy. Add eggs and vanilla, and beat until mixture is smooth and creamy.
Step 2: Turn mixer to low and add in baking soda, salt, cake mix and flour. Stir until evenly mixed. *Stop mixing as soon as it comes together.
Step 3: Chop up Oreos (Image A) and add to mixture along with chocolate chips and sprinkles. Stir until evenly mixed. (Image B)
Step 4: Chill dough for 1 hour to keep cookies from thinning out too much while baking. Keep dough in fridge in between batches.
Step 5: Preheat oven to 350° and line baking sheet with parchment paper. Form dough into 1-inch balls and place about 2 inches apart. (Image C)
Step 6: Bake cookies for 8-10 minutes. (I like mine gooey, so I almost always under-cook them. If the bottom is browning, it’s time to take those bad boys out of the oven!)
Step 7: Let cookies cool on baking sheet for 3-4 minutes and then transfer to a wire rack to finish cooling.
Step 8: Enjoy!
